Every year, as the air grows softer and the hills around Dimora Villa Sofia turn golden, a familiar ritual begins — The Olive Harvest.

It’s one of those moments that marks the rhythm of life here, connecting us to the land and to the traditions that have shaped Sicily for generations.


Just as our Grandparents once did, we entrust this delicate process to a dear friend, who picks each olive by hand, one branch at a time. No machines, no rush — only patience, care, and deep respect for the trees that have been with us for decades. This gentle way of harvesting keeps the trees healthy and allows every drop of oil to carry the purest essence of the fruit.

Once collected, the olives are brought to a small local mill, only a few minutes from the Villa. There, using the cold extraction method, the olives are transformed into a rich, fragrant extra Virgin Olive Oil — our own, made with love and devotion.


This is the very oil you’ll find waiting for you at check-in, a small bottle of our land’s soul.
